Smoked Garlic Soup with Herby Pesto

Ingredients for Soup

1 large potato, peeled, chopped and diced

2 bulbs Barbismoked™ smoked garlic, separated into cloves, peeled

150mls hot chicken stock (or vegetable stock if you prefer)

Salt and freshly ground black pepper

1 tsp chopped fresh chives to garnish

For the Pesto

2 tbsp olive oil

handful fresh parsley

1 tbsp whole almonds

salt and freshly ground black pepper

lemon juice

Method

For the smoked garlic soup: place potato, garlic cloves and hot stock into a pan and bring to boil. Season with salt and pepper, reduce heat and simmer for 10-12 mins or until potatoes are tender. Blend with a hand blender til smooth

For the pesto: place all the ingredients into a small food processor and blend til smooth

To serve, pour soup into a bowl, swirl in a spoonful of the parsley pesto and garnish with chives. Great with warm crust bread and butter!
