Greek Salad

Ingredients

2-3 ripe tomatoes, cut into wedges.
1 cucumber, peeled and chopped in chunks.
1/2 red onion, thinly sliced.
1/2 green bell pepper, thinly sliced.
8-10 Kalamata olives.
1-2 tablespoons medium-sized capers, drained and rinsed.
Sea salt and freshly ground black pepper.
1 tbs red wine vinegar.
2 tbs Cold Smoked Garlic infused extra-virgin olive oil*
Fresh feta, cut into thick slabs.
Dried oregano.

Add tomatoes to a bowl and sprinkle with a bit of salt.
Add cucumbers and onions to the tomatoes.
Drizzle with the Cold Smoked Garlic infused olive oil, add vinegar and season with freshly ground pepper.
Divide the tomato-cucumber-onion mixture into two shallow bowls.
Top each bowl with the green pepper, olives and capers.
Place a piece of feta on top and sprinkle each salad with oregano.

 

  • To infuse the olive oil:      3/4 fill a clean glass spice jar, or similar, with olive oil.  Push 2-3 cloves (depending on strength of  flavour required) of Cold Smoked Garlic through a garlic press and add to the oil.  Cover and shake the jar and leave to stand overnight in the fridge if possible, or at least a good 2-3 hours before using as a delicious dressing.  Add some of the smoky clove skins to the oil for extra taste.  You might want to  remove them before use, but they do make an attractive garnish to the salad!
