Duo of Brassicas

Try this simple recipe complimenting mild cauliflower and peppery broccoli, with a hint of spice to make an interesting alternative to plain served vegetables:

4 tablespoons extra virgin olive oil
3 cloves Madras Rubbed Smoked Garlic – peeled and finely sliced
– plus two more cloves finely minced
half teaspoon Maldon salt
300g of Cauliflower florets
300g of tender stem broccoli (trimmed weight) halved lengthways
Small red oinion – peeled, sliced and pre-softened in butter/olive oil
Knob of butter

Put 400 mls water in a medium saucepan with the olive oil, Madras Rubbed Smoked Garlic and salt and bring to the boil. Add the cauliflower, bring back to the boil and cook for approx 10 mins, adding the broccoli after 4 minutes.

Drain and add the minced garlic, cooked onion and butter.
Toss the vegetables together in the pan until butter is melted and garlic is distributed well.

Quickly pop the vegetables into a frying pan and on a med/high heat stir fry until some of the vegetables are browning. Serve immediately
