Baked Rice with Chicken & Beef - With Barbismoked™ Texan Smoked Garlic

Ingredients

3/4lb of beef cubed – 1″ approx
chicken drumsticks
6/8 slices of smoked streaky bacon
6 small dried chilli
8-10 cloves of Barbismoked™ Texan Smoked Garlic crushed
1 large onion
1 sliced red pepper
4 sliced tomatoes
1 litre of chicken stock
2 teaspoons of turmeric
Approx 250g Spanish Bomba rice (or rice of your choice) 


Method

Using a deep casserole dish, pour in enough olive oil to cover the bottom of the dish.
Crush 8-10 cloves of Texan Smoked Garlic into the oil, add 6 small dried chillis.

Add the onion sliced thickly to cover the garlic and chilli. Next add a smoked streaky bacon layer on top of the onions, followed by the sliced red pepper. Then add the cubed beef to the pot.
Cover with sliced tomatoes.

Add a litre of chicken stock (min. 2 cubes) and add the turmeric. Place in the oven uncovered for an hour and a half…. (gas 6, 200C)

Add chicken drumsticks and cook for a further 45 mins…remove and add the rice  – stir this in making sure the drumsticks stay on the surface.  Return to the oven and cook for around 25 mins or until the rice has absorbed the liquid.
