Baked Crispy Chicken With Bacon & Smoked Garlic - Using Barbismoked™ Smoked Garlic & Smoked Onions

You will need
6 table spoons Olive oil
A whole crushed bulb of Barbismoked™ Chilli Flavoured Smoked Garlic
2 medium Barbismoked™ Garden Herb Smoked Onions sliced into rings
1 large red pepper sliced about 2″ lengths
2 large tomatoes sliced
2 large potatoes peeled and sliced
8 fl.oz of chicken stock (best to use 2 stock cubes)
1 teaspoon crushed or flaked chilli
1 pack streaky bacon
4 chicken quarters washed and dried
Season to taste


Method
Using a large casserole dish add the the oil. Place the vegggies including Barbismoked™ Garden Herb Smoked Onions and crushed Barbismoked™ Chilli Flavoured Smoked Garlic in layers, cover them with the bacon add the stock.
Place the chicken on top and bake in the oven 180\190c for around 2 and a half hours or until the chicken skin is dark golden and crispy.
