Blushed Chicken with Barbismoked™ Garlic

place all ingredients in a roasting bag


2 large chicken breasts

2 large or 4 small cloves Barbismoked™ Hot Chilli and Lime – SmokedGarlic™

1 red onion

Half green pepper

1 roasted red pepper

2 tbspn tomato puree

Chilli powder to taste

Lime zest, and juice

Tbspn light olive oil


Chop Chicken breasts into cubes, and place in a bowl

Chop onion thinly and add crushed
Hot Chilli and Lime – SmokedGarlic™ cloves and add to the chicken

Chop the green pepper and roasted red pepper, add to the chicken mixture

In a separate bowl mix tomato puree, oil, chilli powder and lime juice and add to chicken mixture

Put everything into a roasting bag and place in a baking tray. Secure bag with a tie and pierce a few holes in the bag.

Place in a moderate oven for about 30 minutes.

When cooked, serve with fluffy rice and vegetables, top off with a sprinkling of lime zest – shown here with spicy roasted courgette rings.
